Herbal Tea Jello Squares

Shoutout to my dear friend KP for sending this one my way — my friends just get me. They know I’ll try anything that sounds nourishing and weird (in the best way), tweak it to my liking, and send it back ready for their kitchen too.

This one’s light, gently sweet, and quietly nourishing — not your grandma’s neon cube situation.
When I was making it, I couldn’t help but think of Leanne Morgan. Please tell me you're a fan!? Gosh, I watch her stand-up way too often — it’s basically a nervous system regulation station at this point.
(And let’s be honest, she gets it — watch her take on Jell-O salad here.)

This version is more like a tea ritual that just happens to jiggle.

Ingredients (Serves 4–6)

How To Make It:

Steep your tea
Boil the water and steep both tea bags for 5–7 minutes. Strong is good — it gives the jello real flavor depth.

Sweeten it
While the tea is still hot, stir in the honey until fully dissolved.

Bloom your gelatin
In a separate bowl, add the gelatin to a few tablespoons of cool water (not hot!) and let it sit for 2–3 minutes until thickened.

Combine
Slowly whisk the bloomed gelatin into the hot tea until fully dissolved and smooth.

Pour + Set
Pour into molds, jars, or a glass dish. Let it cool slightly, then refrigerate for at least 3 hours or until firm.

Why I Love It:

It’s simple, gut-friendly, and feels like a soft hug for your digestive system.
It’s also a fun little swap if you’re trying to ditch sugary snacks but still want something that feels playful and nostalgic.

I can’t wait to expand on this recipe — especially for parents and their littles with summer around the corner. If you grew up in the '90s (especially in the Midwest), chances are you’ve had Jell-O or some kind of jello salad at a backyard party or family gathering. Let’s keep the comfort alive, just without all the sugar and weird stuff. Make it yummy. Make it easeful on the tummy.
