  • 1 (15 oz) can black beans, drained and rinsed

  • 2 big handfuls spinach + arugula mix, roughly chopped

Mashed Potato Topping:

  • 4–5 medium Yukon gold or russet potatoes, peeled and cubed

How To Make It

Step 1: Boil the Potatoes
